Wyeast 1187 Ringwood Ale
Information
Great yeast strain with unique fermentation and flavor characteristics. Distinct fruit ester and high flocculation provide a malty complex profile, also clears well. Thorough diacetyl rest is recommended after fermentation is complete.
Alcohol tolerance Approx: 10%
Fermentation Temps: 64-74° F
Flocculation: High
Apparent Attenuation: 68-72%
This is known to be the backup strain to 1098.
Whitbread is usually made with these two strains (aka 1098 and 1099)
Often warm and bready, Makes good English ales.
1099 tends to be a little less dry for sure.
