PLATINUM STRAIN – May/June
Good for Kölsch, Alt, and German style Pale Ales. Strong sulfur component
will reduce with aging. Clean, but with more ester production than
WLP029.
Fermentation Temps: 65-70' F
Flocculation: Very Medium
Apparent Attenuation: 73-80%
Does not ferment well less than 62°F
I've never been big on the Kolsch Style.
Also do not belive that this yeast would make a good Alt Bier.
I've always known Kolsch to have an unpleasant sour taste.
Alt should be made with a clean German Ale yeast.
Of course my idea of the right yeast is Wyeast 1007 German Ale.
